There is no Matlab book that I recommend in particular. I do recommend that you go to a good technical bookstore and browse the table of contents of their Matlab books (or go online and do the same and read the reviews) to figure out which Matlab book has the most examples you are interested in.
One relatively recent book you might want to look at, however, is Matlab: A Practical Introduction to Programming and Problem Solving, by Stormy Attaway. It is available at various bookstores (e.g. Amazon).

In my opinion, the most useful items on that site are: links to a Matlab Function Reference, a collection of all the Matlab Files used in the textbook, and the Solutions to the textbook Quizes.
