Stuffed Zucchini/Zucchini Casserole

Ingredients

  • 1 pound ground beef
  • 2/3 cup cooked rice
  • 4 medium zucchini
  • 1 large onion
  • salt
  • pepper
  • olive oil
  • oregano
  • 1/4 pound parmesan cheese (or goat cheese for casserole)
  • 3 tomatoes

Procedure

  • Cut zucchini in half. Scoop out the insides. Save the insides for later.

  • Steam the zucchini shells for 5 minutes.

  • Preheat the oven to 350 F.

  • Take zucchini innards and cut into small pieces. Also cut the onion into small pieces. Pan fry this mixture in olive oil until done, about 5 minutes.

  • Remove the mixture from pan. Put the beef in the pan and fry until done. Mix the veggies back in. Add rice, grated cheese, diced tomatoes, and oregano. Put this mixture into the steamed zucchini shells.

  • Bake the stuffed zucchini in the oven at 350 F for 15 minutes.

  • Serve hot.

  • For casserole, use goat cheese instead of parmesan cheese. Cook the stuffing as before, but instead of stuffing the shells alternate layers of the flattened zucchini shells and the stuffing. Bake at 350 F for 20 to 25 minutes.
